If you are breastfeeding a little one with a Cow’s Milk Protein Allergy and are craving something seriously creamy that tastes like milk this is the recipe for you! It does take a little time to cook but is so easy to prepare. The hardest part of this dish is taking it out of the oven to stir without slopping it everywhere…..I love rice pudding so thought it was heavenly. Felix however gagged and burst into tears that I had given him something so awful. I’ll try again just in case I’d caught him on a bad day.
Dairy free/nut free/egg free/gluten free/soya free
Preheat oven to 170c
In a shallow baking dish mix 2 and a half cups of coconut milk alternative drink with 1/2 cup of pudding rice and 1/4 cup of light soft brown sugar.
Grate 1/4 of a nutmeg using a fine grater over the pudding.
Bake for 30 mins.
Remove from the oven to give a good stir and bake for another hour until the rice is cooked.
If you don’t like skin on your rice pudding stir again before serving.
