Syrup Sponge Pudding

It was a bit of a revelation when I realised this childhood favourite could be made with dairy free margarine so easily (I use Stork block) with no sacrifice in flavour.  It also works remarkably well with gluten free flour as the warmth and syrupy texture disguise the graininess I’m less keen on in many gluten free recipes.

Delia always delivers a blinder when you want a classic steamed pudding for a cold day.  We ate this with lots of Alpro dairy free custard.
