We’ve been snowed in this week and I’ve perfected a recipe for the most delicious hot chocolate. It’s been positively baltic in Norfolk this week. School have had four (yep you’ve heard me right, four) snow days and I haven’t left our village since Monday. #stormemma and #thebeastfromtheeast can do one! We are now ready for spring flowers and a little warmth on our faces.
Felix has discovered a fondness for chucking himself down any snow covered slope with huge enthusiasm. He has proved himself to be immune from the cold using so much energy. I, on the other hand have been freezing to death on the sidelines and needed something really good and unhealthy to warm me up. My hot chocolate is like the rich, Spanish hot chocolate and is free from all of the top 8 allergens.
My snow day top tip is: If you are snowed in and your local shop has run out of milk, reach for the coconut milk drink. It tastes milder than almond milk and thinner than soya milk. You’ll make the best hot chocolate with it!
500ml coconut milk drink
2 heaped tbsp cocoa powder – I normally use bournville but it does contain a may contain traces of milk warning on the label
2 tbsp Sweet freedom choc shot liquid chocolate
4 tsp demerara sugar
In a saucepan mix a little of the coconut milk with the cocoa powder to make a thick paste. Add the rest of the milk and bring the pan to a simmer, stirring regularly.
Add the choc shot and sugar continuing to stir for 3 minutes.
Pour into 3 mugs, you don’t need much as it’s so thick and rich. Find your slippers and warm up from the snow!
